I don't know about you but not having to cook at least one of my meals a day is a huge life saver. Having all of the leftover wedding food (even after splitting up the leftovers) I had that secured meal for four days in a row! Sure, variety is needed in your diet, but I say as long as you're only eating the same thing once a day and not for all three meals (or snack if that's your game - I wished I was a grazer).
Crock-pot meals are the easiest way to deliver a lot of quantity and quality at once when you don't have the space for a spare fridge of leftovers or what have you. My favorite crock pot meal is lemon garlic chicken and is super simple to do.
I sear the chicken on the stovetop at medium heat until each side has golden brown skin (but it isn't cooked all the way through). I mix in lemon juice, garlic, salt and pepper and let the chicken do its thing. Then I transfer it to the crock pot, and let it cook for 3 hours on high or 6 on low (or until the meat melts when you touch it with a fork and becomes like pulled pork, but chicken.) Doing something like this once a week is vital to hold off the desire to eat out, because I'm the type who would rather get more mileage out of a meal I already made then throw out the extra uneaten portions.
