freshly made impossible apple pie is totally possible to make
Here is the exact recipe for totally possible "Impossible Apple Pie" with my tweaks in italics: Enough peeled thinly sliced apples for a 9" deep pie tin to fill 3/4 full. (I fill a glass pie plate all the way, and don't peel off the skin – that's the good part!) Mix 2 tablespoons sugar, 1 teaspoon cinnamon and sprinkle over apples. (I am heavy handed with my cinnamon, and no one has ever complained! If you're a fan of the spice load it up. The pie on the left has 1 tablespoon in it.) Melt 3/4 cup margarine (1-1/2 sticks) add 1 cup sugar, 1 egg, and 1 cup flour. Beat with wire whisk. Add salt (optional). Bake at 350º – 40 minutes or until apples are done (to get the golden brown edge I preheat the oven way before I start mixing ingredients so that it's nice and insulated for the whole 40-50 minutes). You can add 1/2 cup walnuts if so desired.
This is a great quick way to use up any excess apples from your fall orchard runs! It's a favorite around here.
